After a successful stint running Josh Niland’s Fish Butchery, chef Paul Farag moved to Surry Hills to head up the kitchen at Nour, as Executive Chef in September 2020. At Nour, he is breaking the traditional mould of Middle Eastern cuisine and elevating it to new heights with vibrant flavours from his Egyptian heritage, combining it with classical fine-dining technique he has acquired from past roles at Sydney’s Monopole, Four in Hand and Gordon Ramsay’s fine diner in London, Pétrus.
Later this year, the Executive Chef will open a new restaurant in the heart of the CBD in the MLC building. Aalia will embrace the unexplored and reimagined possibilities of Middle Eastern cuisine, with a focus on seafood and is set to open on September 1.
Paul is also known for championing a minimal wastage policy in his kitchens, ensuring that all produce is used to its fullest potential, we can't wait to see what he has planned for his Harvest Bites collaboration!
