Simon Sandall, owner of Boronia Kitchen in Sydney’s Hunter’s Hill, honed his culinary skills in high profile kitchens across London and Sydney. Prior to opening Boronia Kitchen he was Head Chef of ARIA Sydney and Executive Chef across the entire Morsul Group. We are so excited to have Simon, a long-time supporter of the Harvest Bites project back in the OzHarvest kitchen preparing a meal with heart for our Harvest Bites community. With a passion for seasonal Australian produce, Simon’s menu will showcase some of our best local growers and producers to give you a Monday Meal that is innovative and inviting – full of fresh, clean flavours.

Tasmanian salmon is cured with citrus zest, sugar and salt before being lightly cold smoked in our 100-year old Torbreck wine barrel, then sliced and torched lightly, dressed with a sweet mustard gravlax dressing, served with a labneh gribiche served on a rye crostini

Boronia Master 1/2 chicken, shallot salsa
Whole free range Baida chicken is brined in a Chinese master stock for 3-4 hours, then steamed, dried out, & baked then brushed with a master stock maltose finished with a shallot salsa and bok choy
