Alex Elliott-Howery and Jaimee Edwards are from boundary-breaking food community Cornersmith café and cooking school. They have recently released 'Use it All', a cookbook and sustainable guide for home cooks, that offers simple and delicious ways to cook and eat by buying less, wasting less and making more with what you’ve got.
Alex and Jaimee are long time advocates for reducing food waste in homes and in the hospitality industry. This low-waste vegetarian menu is straight out of the pages of 'Use it All' makes use of every part of seasonal produce. Parts that might otherwise be thrown away are transformed into dishes that are nourishing and full of flavour.
Vegetarian Menu
To keep in line with the Cornersmith ethos, this Monday Meal will be vegetarian
Use it All Lentil, Celery and Marsala Braise with Whole Cauliflower Bake (using stems leaves and all)
