Lewin White, RE
The very humble Lewin White is the new head chef at one of the best new venues in Sydney.
RE is the brainchild of Matt Whiley and is the world's first sustainable, 'no-waste' bar. Lewin's menu at RE is innovative and inventive, using market surplus and trimmings from Icebergs Dining Room & Bar.
The tabletops and benches look like terrazzo, but are made from recycled milk bottles, the hanging lights are grown not made, from mushroom mycelium. The stools are made from discarded wood and plastic from industrial plants.
RE is remarkable, we highly recommend you check it out when they're back open.
